  2. New Potato Salad with Buttermilk Dressing

  7. 1/2 pound new potatoes (about 7 medium)

  8. 1/2 cup sliced radishes

  9. 2 each green onions -- chopped

  10. 1 medium sweet yellow -- orange, or red

  11. **Dressing** -- pepper diced

  12. 1/2 cup buttermilk

  13. 1/4 cup lowfat yogurt

  14. 2 tablespoons dill -- fresh chopped

  15. 2 tsp. dried 1 tablespoon vinegar

  16. 1 tablespoon canola oil

  17. 1/2 teaspoon Dijon mustard

  18. salt and pepper -- to taste

  19. Method

  20. Scrub and halve potatoes lengthwise. Bring large pot of salted water to boil. Add potatoes, cover and return to boil. Cook for 15 minutes or until fork tender.

  21. Dressing: In large bowl, whisk together ingredients.

  22. 5 to 10 minutes or until no longer

  23. steaming. Cut potatoes into bite-size pieces; gently stir into dressing along with radishes, onions and yellow,orange,or red pepper. Makes 4 servings. ??
