  1. Preheat oven to 425 degrees F. To make filling, in a large bowl, combine pumpkin puree, cream, sugar, milk, eggs, yolk, maple syrup, spice, and salt. Stir until smooth. Fill the piecrust to the top and smooth with a spatula (reserve any leftover filling). Bake the pie on the center rack of the oven for 15 minutes, reduce heat to 350 degrees F, and bake until set -- about 40 more minutes. Allow pie to cool completely before serving.
