  1. 8 cups flour OR 5 cups flour and 3 cups whole wheat flour

  3. 3 Tbsp. baking powder

  4. 2 tsp. salt

  5. 2 tsp. ground cinnamon

  6. 2 tsp. ground nutmeg In large bowl, combine all ingredients. Mix well. Store in air tight container. Label and date to use within

  7. 6 months. Single batch:

  8. 2 3/4 cup muffin mix

  9. 1 egg , beaten

  10. 1 cup milk

  11. 1/2 cup butter or oil

  1. Preheat oven to 400 degrees. Line muffin tins. Measure dry mix into large bowl. Add egg, milk and oil into small bowl and mix. Add to dry mix until just moistened. Fill muffin tins to ¾ full. Bake 18-20 minutes
