  2. Pecan Pie Mini Muffins

  7. 1 cup packed brown sugar

  8. 1/2 cup all-purpose flour

  9. 1 cup chopped pecans

  10. 2/3 cup butter (no substitutes) -- melted

  11. 2 eggs -- beaten

  12. In a bowl, combine brown sugar, flour and pecans; set aside. Combine butter

  13. and eggs; mix well. Stir into flour mixture just until moistened. Fill

  14. greased and floured or paper-lined miniature muffin cups two-thirds full.

  15. 350 degrees for 20-25 minutes or until muffins test done. Remove

  16. immediately to cool on wire racks. Yield: about 2-1/2 dozen. - - - - - - - - - - - - - - - - - -
