  1. 1 tablespoon Olive oil

  2. 4 Spring onions

  3. 675 grams Ripe tomatoes, skinned, deseeded and quartered

  4. Salt and freshly ground black pepper

  5. 2 tablespoons Fresh basil leaves, torn

  6. 1 large Cauliflower, cut into florets

  7. Fresh basil, to garnish

  1. Heat the oil in a pan and add the onions and tomatoes. Cook for 1-2 minutes.

  2. Stir in the seasoning and basil and cook for 1-2 minutes. Meanwhile, cook the cauliflower in boiling, salted water for 4-5 minutes until almost tender. Drain well.

  3. Arrange the vegetables on a serving plate and garnish with fresh basil. NOTES : Jazz up cauliflower with the fresh flavours of tomatoes and basil.
