  1. Crust:

  2. 1 1/4 C Graham Cracker Crumbs

  3. 1/3 C Butter

  4. 3 Tbsp Sugar

  5. Pinch Salt

  6. Filling:

  7. 4 Egg Yolks

  8. 1/2 C Sugar

  9. 1/3 C Fresh Key Lime Juice

  10. Grated Lime rind

  11. 2 1/4 C Heavy Cream

  1. Melt butter and cool, mix rest of ingredients and press in 8" pie plate Bake 375° 15 min.

  2. Lightly beat egg yolks In top of double boiler add eggs, sugar, lime juice, cook over med. heat about 10 min. till it coats back of spoon.

  3. Remove from heat and add rind. Chill till thickened, not stiff.

  4. Whip 1½ C Heavy Cream till soft peaks form. Fold in to filling, fill crust, chill 24 hrs.
