  1. Coconut Marinade

  2. 1/4 c creamed coconut

  3. 1/3 c hot water

  4. 1 onion

  5. 1 clove garlic

  6. 2 small, fresh, red chiles

  7. 1/2 teaspoon grated lemon zest

  8. salt and pepper(to taste)

  9. Dissolve coconut in hot water, put into blender with remaining

  10. ingredients and pulse until well blended. Marinate peeled, deveined,

  11. large shrimp in this for at least 30 minutes. Skewer shrimp and 5 to 6 minutes. Turn frequently

  12. and baste with marinade.
