  1. 1 cup 160g / 5.6oz Brown sugar - firmly packed

  2. 1/2 cup 118ml Hot water

  3. 1 cup 160g / 5.6oz Seedless raisins

  4. 2 tablespoons 30ml Butter

  5. 4 tablespoons 60ml Cider vinegar

  6. 1 1/2 teaspoons 7 1/2ml Worcestershire sauce

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 1/8 teaspoon 0.6ml Black pepper - freshly ground

  9. 1/4 teaspoon 1 1/3ml Ground cloves

  10. 1/8 teaspoon 0.6ml Mace

  11. 1 cup 62g / 2 1/5oz Currant jelly

  1. simmer the brown sugar and water together for 5 minutes, stirring until sugar is dissolved. Add all remaining ingredients, and cook until jelly dissolves. Simmer an additional 10 minutes.

  2. May be made in advance and kept refrigerated until ready for use.

  3. Reheat slowly until simmering.
