  1. 2 tablespoons 30ml Butter

  2. 1 tablespoon 15ml Onion - peeled, chopped fine (small)

  3. 2 cups 320g / 11oz Long-grain white rice

  4. 3 3/4 cups 888ml Vegetable or chicken stock

  5. 1/4 cup 59ml Fresh lime juice

  6. 2 teaspoons 10ml Grated lime peel

  7. Chopped fresh parsley or cilantro

  1. Melt butter in heavy large saucepan over medium heat. Add onion and saute until tender, about 10 minutes. Add rice and stir to coat. Add stock, lime juice and lime peel. Bring to boil, stirring occasionally. Reduce heat to low, cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand covered 5 minutes. Season to taste with salt and pepper.

  2. Transfer rice to serving bowl. Sprinkle with parsley or cilantro.

  3. This recipe yields 4 servings.
