  2. BRUNCH ENCHILADAS

  7. 2 tb Olive oil

  8. 1 c Ham -- diced

  9. 2 Eggs

  10. 1 sm Onion -- diced

  11. ds Salt

  12. ds Pepper

  13. 2 tb Butter

  14. 1/4 c White flour

  15. 1/2 c Colby jack cheese -- shredded

  16. 3/4 c Milk

  17. Salsa

  18. Saute ham and onion in olive oil. Add eggs and scramble. In small pan, heat butter and whisk in

  19. flour. Slowly add milk while whisking. Heat until

  20. thickened and bubbly. Salt and pepper to taste. Heat

  21. tortillas on a griddle until soft and pliable, but do

  22. not allow to harden. Divide the egg mixture into three

  23. tortillas and roll. Pour the white sauce over and top
