  2. MANDARIN HOT AND SOUR SOUP

  6. 8 c Soup stock,

  7. 6-8 cups

  8. 1/4 lb Pork, lean

  9. 1/2 ea Square bean curd

  10. 1/4 c Shredded bamboo shoot

  11. 3 ea Dried black mushrooms

  12. 2 tb Sliced can button mushrooms

  13. 4 ea Dried wood ears

  14. 2 ea Stalks green onion, chopped

  15. 1 ea Slice cooked ham, shredded**

  16. 4 tb Vinegar

  17. 1 t Chili oil

  18. 1/4 ea Hite pepper

  19. 3/4 ts Salt

  20. 1/2 ts Sesame oil

  21. 1/2 ts Sugar

  22. 1 tb Soy sauce

  23. 2 ea Eggs lightly beaten

  24. 3 tb Cornstarch in

  25. 3 t water

  26. Soaked and shredded. ** Optional Bring soup stock

  27. to a boil, add shredded pork, black mushrooms and wood

  28. ears. Cook 2-3 minutes. Add remainder of ingredients

  29. and seasonings (except cornstarch, eggs, and green

  30. 2 minutes. Thicken

  31. with cornstarch and turn off heat. Slowly pour in

  32. beaten eggs in a thin stream while stirring. Serve

  33. immediately. Garnish with green onion.

  34. If soup is to be prepared ahead of time, do not add

  35. cornstarch and eggs until serving time. Otherwise the

  36. egg will be overcooked and spoil the appearance. Soup

  37. should be quite hot and sour. Adjust the hotness with

  38. varying amount of white pepper and the sourness with
