  1. 1 Onion - chopped (large)

  2. 6 Garlic cloves - chopped

  3. 2 cups 125g / 4.4oz Rendered beef kidney suet

  4. 2 1/2 lbs 1135g / 40oz Extra lean chuck beef - cubed

  5. 1 lb 454g / 16oz Ham - cubed

  6. 2 cups 474ml Water

  7. 1 teaspoon 5ml Cumin - ground

  8. 2 teaspoons 10ml Oregano

  9. 1 cup 237ml Red chili pulp *or*

  10. 6 tablespoons 90ml Chili powder

  11. 1 tablespoon 15ml Salt to taste

  1. Recipe Instructions Cook onion and garlic in rendered beef suet until onion is limp and yellow. Add beef and ham and cook, stirring often, until it is a uniform gray color. Add water, mix well, simmer one to one and a half hours. Add cumin, oregano, chili pulp or powder, and salt to meat mixture. Stirring frequently to prevent sticking, simmer for an additional hour.
