  1. 1 lb 454g / 16oz Dried pinto beans

  2. 2 1/2 cups 592ml Cold water

  3. 1/2 lb 227g / 8oz Salt pork - cut up

  4. 1 Red chile pepper

  5. 1 Onion - chopped (medium)

  6. 1 Garlic - minced

  7. 6 oz 170g Tomato paste

  8. 1 1/2 tablespoons 22ml Chili powder

  9. 1 teaspoon 5ml Salt

  10. 1 teaspoon 5ml Cumin seed

  11. 1/2 teaspoon 2 1/2ml Marjoram

  1. Recipe Instructions Wash and pick over beans; put in mixing bowl. Cover w/cold water and soak overnight. Next morning, put beans and water into Dutch over and bring to boil; reduce heat. Cover and simmer 1 hour. Stir in remaining ingredients; cover and simmer 3 hours or until tender. Add more water if necessary. Serves 8.
