  2. History: It is a recipe we shared in our Cooking Circle at our church. It was a lady friend's great-grandmother's recipe handed down from generation to generation. It is so quick and easy to make.

  4. Amount/Measure/Ingredient

  5. 1 lb. cutup stew beef or ground beef

  6. 3 cup cooked Minute Rice

  7. 2 cup cooked, mixed frozen or canned vegetables

  8. 1 medium chopped onion

  9. 1-8 ounce can diced tomatoes

  10. 2 cups tomato juice

  11. 2 cups grated cheese (mozzarella or cheddar)

  12. Brown and cook beef till thoroughly cooked. Set aside.

  13. Mix together canned tomatoes and onion. Set aside.

  14. Mix together cooked rice and cooked vegetables in a ovenproof bowl.

  15. Stir in cooked beef and press mixture down tight in the bowl.

  16. Pour the tomato juice evenly over rice mixture.

  17. Spread tomato/onion mixture evenly over rice mixture.

  18. Sprinkle the grated cheese evenly over the tomato mixture.

  19. 350 degrees F for 30 minutes or till cheese is golden.

  20. Let sit for 5 minutes before serving.

  21. Serve as side dish or main course.
