  1. 10 large new potato es

  2. 3/4 cup butter

  3. 5 fresh chopped onion s (green)

  4. salt & pepper to taste

  5. 1 1/2 cups grated colby cheese

  6. 1 package bacon bits

  7. 1 16 oz. carton sour cream

  1. Boil potatoes until a fork easily punctures them. Pour off water and peel while hot. Mash by hand, leaving in medium size chunks while mixing in butter, salt, pepper, onions, bacon bits, and half of the cheese. Stir in sour cream and pour into a 9“x13” baking dish. Top with remaining cheese and bake until bubbly at 325 degrees.
