  1. 4 boneless chicken breasts

  2. 4 slices of Cheddar cheese

  3. 1/2 c breadcrumb s

  4. 4 T grated Parmesan cheese

  5. 1/2 t salt

  6. 1/2 t pepper

  7. 2 egg whites

  8. Olive oil

  1. Preheat oven to 400°F.

  2. Split the chicken breasts and insert cheese slices.

  3. Combine breadcrumbs, Parmesan, salt and pepper. Whip egg whites until frothy.

  4. Dip the breasts in egg whites, then coat them with the crumb mixture.

  5. Heat the oil in a sauté pan. Sear one side of the breasts, flip them, and put the whole pan in the oven to finish them. Bake for 20 minutes.
