  1. Jack Casserole

  2. 1 medium onion, finely chopped

  3. 2 tablespoon butter

  4. 8 oz can tomato sauce

  5. 4 oz can green chili peppers, chopped

  6. 1/2 teaspoon salt

  7. 2 eggs, slightly beaten

  8. 1 cup half-and-half or light cream

  9. 11 oz corn chips

  10. 1/2 lb Monterey jack cheese, cut into 1/2-inch cubes

  11. 1/2 cup cheddar cheese, shredded

  12. 1 paprika

  13. 1 cup sour cream

  14. Preheat oven to 350 degrees F. Saute onion in butter until

  15. transparent. Stir in tomato sauce, chopped peppers and salt. Simmer

  16. 5 minutes. Remove from heat. Combine eggs and cream. Stir into sauce. Place half the corn chips in bottom of a 1 1/2 quart casserole.

  17. Add in layers, half the Monterey Jack cheese, half the sauce.

  18. Repeat. Top with sour cream. Sprinkle with shredded cheddar cheese

  19. and paprika. Bake, uncovered, for 30 minutes.
