  1. 2 1/2 pounds fresh asparagus -- ends snapped off

  2. 1/2 cup low-fat sour cream

  3. 1/4 cup parmesan cheese

  4. 1 tablespoon low-fat mayonnaise

  5. 1 tablespoon tarragon

  6. 1 tablespoon lemon juice

  7. 1/2 cup evaporated skim milk fresh ground pepper and salt -- to taste

  1. Preparation : Rinse the asparagus and pat dry. Steam the spears in an asparagus steamer or in a metal steamer over boiling water for 8 minutes until tender-crisp. Meanwhile, combine all remaining ingredients in a saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. Pour the sauce over the asparagus and serve.
