  1. 4 lbs 1816g / 64oz Croissants (large)

  2. 3/4 cup 148g / 5 1/5oz Granulated sugar

  3. 2 tablespoons 30ml All-purpose flour

  4. 1/4 cup 27g / 1oz Unsweetened cocoa powder

  5. 1 Salt

  6. 5 1/2 cups 1303ml Lowfat (1 percent) milk

  7. 2 tablespoons 30ml Butter

  8. 2 teaspoons 10ml Vanilla

  9. 1 lb 454g / 16oz Fresh strawberries

  1. Recipe Instructions Warm or bake croissants as necessary. Meanwhile, in a 2-quart or larger saucepan, stir together sugar, flour, cocoa powder and salt. Place pot over medium heat; gradually add milk, whisking constantly until well-blended and smooth. Continue to cook, stirring frequently, until the sauce is thickened, about 5 to 6 minutes. Reduce heat to low. Add butter; stir until melted and well-blended. Remove pan from heat; stir in vanilla. Cut croissants in half. Serve 1/4 cup sauce over each warm croissant half. Garnish each plate with 4 strawberries, whole or sliced.
