  1. Cake

  2. 2 cups flour

  3. 2 1/2 tsp baking soda

  4. 2 tsp cinnamon

  5. 1 tsp salt

  6. 1 cup oil

  7. 2 cups sugar

  8. 3 egg s

  9. 8 oz crushed pineapple (undrained)

  10. 11/3 cup grated carrot s

  11. 2 cups coconut Frosting

  12. 8 oz pkg cream cheese, softened

  13. 1/4 cup butter

  14. 1 box powdered sugar

  15. Crushed pecan s (opt.)

  1. Preheat oven to 350 degrees. Mix flour, baking soda, cinnamon, and salt. Beat oil, sugar and eggs until well blended. Add flour mixture and beat until smooth. Stir in pineapple, carrots and coconut. Pour into greased 13 x 9 inch pan. Bake for 50 minutes or until cake tester comes out clean. (Or use two 9" pans for 25-30 min.)

  2. For Frosting:

  3. Cream together cream cheese and butter in large bowl. Add sugar and beat well. Frost lightly between layers and then ice sides and top.
