  5. 2 c Dried white pea beans

  6. 1/2 lb Salt pork

  7. 2 tb Butter

  8. 1 Garlic clove

  9. 1/2 c Onion, chopped

  10. 8 c Cold water

  11. 1/4 c Leek, chopped, white part

  12. 2 tb Salted herbs, rinsed in

  13. cold -only -water

  14. 1/4 c Smoked ham, plus ham bone Servings:

  15. Soak peas for at least 8 hours or overnight in water to cover; drain. Heat

  16. butter in a large, heavy pot and saute onion and leek until tender. Add

  17. peas, ham, salt pork (in one piece), garlic, water and salted herbs. Bring

  18. 2 to

  19. hours or until peas are tender. Stir occasionally during cooking, adding

  20. more water if necessary. Remove salt pork, cut in small pieces, then

  21. return to soup. May be frozen.
