  8. --Crust--

  9. 1 1/2 Cups Graham Cracker Crumbs

  10. 1 Teaspoon Flour

  11. 1/2 Cup Sugar

  12. 1 Teaspoon Cinnamon

  13. 1/2 Cup Butter Or Margarine -- melted

  14. --Filling--

  15. 3 Egg Yolks

  16. 2 Cups Milk

  17. 1/4 Cup Sugar

  18. 2 Tablespoons Cornstarch

  19. 1 Teaspoon Vanilla

  20. FOR THE CRUST:

  21. Mix dry ingredients together. Add the melted shortening and stir

  22. together. Use half of this mixture to line an 8 or 9-inch pie pan,

  23. pressing mixture to bottom and sides with fingers. Save the other half

  24. of mixture for topping.

  25. FOR THE FILLING:

  26. Mix egg yolks and milk in top of a double boiler. Mix sugar and cornstarch and add to egg mixture. Cook until mixture coats a spoon,

  27. stirring constantly. Add vanilla. Cool slightly and pour into pie

  28. crust. Top with merengue. Sprinkle with reserved crumb mixture. Bake

  29. 400 until merengue is slightly browned, about 5 to 10 minutes. Cool

  30. several hours (at least 2) to allow filling to set before serving.
