  1. 1 kg potato es

  2. 400 gram of white part of leek s

  3. 1 middle large onion

  4. 6 dl vegetable stock

  5. 150 gram creme fraiche olive oil salt and pepper to taste

  1. Peel the potatoes and onion and chop them in pieces. Wash the leeks and cut them in small rings. Fry the onion in some oil, making sure they do not change colour. Add chopped potatoes, stock and maybe some salt. Bring to boil until potatoes are cooked. Add leeks and boil for another 5 minutes. Add crème fraîche and puree soup. Add salt and pepper to tast and leave to cool before you serve the soup.
