  1. 1 t. butter

  2. 1 t. olive oil

  3. 1/4 c. mushrooms, sliced

  4. 1/4 c. green peppers, chopped

  5. 1/4 c. red peppers, chopped

  6. 1/4 c. yellow peppers, chopped

  7. 1 sliced clove of garlic

  8. 2 T. chopped onion

  1. In 8" fry pan, melt butter with olive oil. Add vegetables and stir-fry until almost tender-crisp. Push vegetables to sides of pan and add egg. Cook egg to desired doneness. Serve with buttered toast.
