  1. 2 slabs prok rib s - baby back

  2. Water

  3. Dry Rub -

  4. 2 teaspoons chili powder

  5. 1 teaspoon garlic salt

  6. 2 teaspoons ground cumin

  7. 1 teaspoon ground oregano

  8. Chipotle Barbecue Sauce

  9. 1 cup K.C Masterpiece BBQ sauce

  10. 3/4 cup Rojo's salsa

  11. 3 tablespoons honey

  12. 1-2 chipotle chilies in adobe sauce, minced

  13. 1 tablespoon adobo sauce

  14. Juice of 1 lime

  1. Preheat oven to 400 degrees. Place ribs in 2 large, shallow pans, add ½ water. Seal tightly with foil and back 1 hour.

  2. Meanwhile combine dry rub ingredients; set aside. Combine chipotle bbq sauce ingredients in small saucepan; simmer for 5 minutes, set aside. Remove ribs from oven and drain water. Sprinkle dry rub on both sides of rib slabs and place on grill over medium-low heat; grill for 5 minutes per side. Grill for 10-20 minutes more, turning and brushing with sauce frequently, until ribs are lightly charred and coated with sauce.
