  2. 4 large crabs

  3. 3 pts. white stock

  4. 1 cup rice

  5. 1 cup cream

  6. 1 tablespoon butter

  7. 1 tablespoon flour

  8. 1/2 teaspoon salt

  9. Few grains pepper

  1. Wash and boil crabs, open them and take out meat.

  2. Cut fine and pound in a mortar.

  3. Add the washed rice and crabs to the stock and simmer thirty minutes.

  4. Rub through a sieve.

  5. Bind with butter and flour cooked together; add cream and seasonings, reheat and serve.
