  2. Apple Kugel

  7. dough:

  8. 1 1/4 c flour

  9. 1/2 t baking powder

  10. 1/4 t salt

  11. 1 T sugar

  12. 2 T oil

  13. 1 egg

  14. 4 T warm water

  15. filling:

  16. 3 lb apples, peeled & sliced

  17. 1/2 c raisins

  18. 1 t lemon juice

  19. 1/4 c sugar

  20. 1 t cinnamon

  21. 1/4 t nutmeg

  22. 1 t vanilla

  23. Dough: Sift dry ingredients together. Add oil and egg, and water to bind. Turn out on a floured board. Knead until smooth and spongy. Set in a bowl, sprinkle with flour, cover with plastic wrap, and chill 30 minutes.

  26. apple mixture along long end, and roll as for jelly roll. Place roll in a greased utility pan. Brush top with beaten egg. Bake at 350F (180C) until brown. Baste with orange juice if apples are not juicy enough.
