  1. 2 C flour

  2. 3 tsp baking powder

  3. 1 tsp salt

  4. 3 Tb sugar

  5. 2 egg s

  6. 1/3 C melted shortening

  7. 2 C milk

  1. Mix together all dry items first. Add eggs and milk, then mix. Melt shortening in microwave and add, along with milk. Beat until very smooth. In a hot skillet or on a flat (hot) griddle, melt a small amount of shortening to grease the pan. Pour in small amounts of batter to whatever size you want your pancakes to be. The trick to telling when to flip your pancake is all in the bubbles. As it cooks on the first side, bubbles will start to rise up through the uncooked batter. When the bubbles start appearing in the middle as well as long the edges, flip the cake over. If it’s not as brown as you like, just wait till the other side is browned, then flip it again until you have them perfect.
