  1. 500g fresh mushrooms, such as chestnut or crimini, stemmed

  2. 4 tablespoons extra virgin olive oil

  3. 3 tablespoons white wine vinegar

  4. 2 cloves garlic, pounded

  5. 4 tablespoons red onion, finely chopped

  6. 2 tablespoons (packed) chopped fresh oregano

  7. 2 tablespoons (packed) chopped fresh thyme

  8. 1/2 teaspoon salt

  9. 1/2 teaspoon freshly ground black pepper

  1. Boil the stemmed mushrooms in plenty of salted water for 10 minutes. Drain and let cool.

  2. Combine all ingredients in a glass jar, carafe or container and mix well. Add the mushrooms and refrigerate until serving at least 5 hours.

  3. Remove from refrigerator 10 minutes before serving.
