  1. 6 oz spaghetti

  2. 2 egg s beaten

  3. 1/4 cup grated Parmesan

  4. 2 Tbs butter

  5. 1/2 cup chopped onion

  6. 1 cup sour cream

  7. 1 lb sausage (Italian or turkey)

  8. 6 oz tomato paste Italian spices to taste ( oregano , basil, etc.)

  9. 1 cup water

  10. 4 oz sliced mozzarella cheese

  1. Cook spaghetti according to instruction. Drain. Combine warm spaghetti with eggs and Parmesan cheese. Pour into buttered 10-inch pie plate and press to form “pie crust.” Remove sausage from casing, crumble and brown over medium heat. Drain fat. Add tomato paste, spices and water. Mix and simmer for 10 minutes. Pour sausage mix into pie as crust filling. Sauté onions in butter over medium heat until soft. Remove from heat and add sour cream. Pour over sausage mixture as topping. Bake at 350° for 25 minutes. Place mozzarella slices on top and bake an additional 5-10 minutes until melted. Let rest a few minutes then slice as pie. Serve with red wine and salad.
