  1. 1 fennel bulb, trimmed and chopped

  2. 1 red onion , chopped

  3. 4 cloves garlic

  4. 3 sprigs rosemary

  5. 1 tablespoon olive oil , plus extra for brushing Pork fillet/ loin

  1. Preheat oven to 390°. Place fennel, onion garlic and rosemary in a baking dish, add oil and toss to coat. Cook for 15 minutes. Brush the pork with oil and sprinkle with salt and pepper. Heat a medium non-stick frying pan over high heat, add pork and cook for 1-2 minutes on each side or until browned. Place pork in the baking dish and roast with the vegetables for 15 minutes or until the fennel is tender and the pork is cooked through. Slice pork, toss with the vegetables and baby spinach leaves to serve.
