  1. 5 heaping tbsp. flour

  2. 2 eggs

  3. 1/4 tsp. salt

  4. 1/2 to 1 tsp. sugar milk

  1. Beat eggs in a small bowl. In a separate bowl, combine flour, salt and sugar. Combine the egg and flour mixtures by pouring the eggs slowly into the flour mixture while stirring. Add milk, pouring with one hand and stirring with the other. The batter should be thin. Spray a frying pan with nonstick vegetable coating or melt a little butter in the bottom of the pan. Pour batter in center. Tip the pan so the batter spreads to the outer edges. Once the pancake has cooked on the first side, work around the edges of the pancake with a spatula to loosen it and flip it over. Allow second side to cook. Serve with maple syrup or a mixture of lemon juice and sugar.
