  8. 1 c flour -- unsifted

  9. 1/2 tsp sugar

  10. 1/2 tsp salt

  11. 1/3 c olive oil

  12. 1 1/2 tbsps skim milk -- or as needed

  13. Combine the flour, sugar, and salt in a 9 pie plate and stir fork to

  14. blend. Drizzle the oil and milk over the mixture, and lightly toss it

  15. with the fork or your fingertips until crumbly. Pinch the mixture

  16. together; if it is too dry and crumbly, add a few more drops of milk.

  17. With the back of a spoon or your fingers, press or pat the dough evenly

  18. over bottom and up the sides and rim of the pie plate, taking care not to

  19. build it up in the corners. To crimp the edge, either press the floured

  20. tines of a fork onto the dough on rim, or pinch the dough into a fluted

  21. pattern with your fingers. Refrigerate the crust for at least 30
