  1. 2 tablespoons olive oil, preferably extra-virgin

  2. 1 teaspoon balsamic vinegar

  3. 1 teaspoon fresh lemon juice

  4. 1/4 teaspoon salt

  5. 1/8 teaspoon pepper

  6. 2 pounds assorted tomatoes, large ones, cut in bite-size pieces (6 cups total)

  7. 1/4 cup loosely packed fresh mint leaves, finely chopped Tender salad greens

  1. Mix Dressing ingredients in a large bowl.Add tomatoes and toss gently to mix and coat. Spoon onto lettuce-lined plates.You can use as many different types of red and/or yellow as you like, unless you have a favorite you feel you can never eat enough of. Mint adds a refreshing twist.
