  1. Brush asparagus with olive oil, and season with salt. Grill over medium-high heat, turning often, until asparagus are just tender, about 8-10 min. Transfer asparagus to a warm plate. Drizzle vinaigrette over asparagus. Sprinkle with pinenuts and top with Parmesan cheese. Vinaigrette Dressing 2 Tbsp. finely chopped Challots 2 tsp. lemon zest 2 Tbsp. fresh lemon juice 1 Tbsp. drained capers 2 Tbsp. chopped leaf parsley 3 Tbsp. olive oil salt and freshly ground black pepper Mix the shallots, lemon zest and juice, capers, and parsley in a small bowl. Whisk in the olive oil and season to taste with salt and pepper. Set aside.
