  1. 2 3/4 c. all purpose flour

  2. 3 tsp. baking powder

  3. 1 tsp. salt

  4. 2/3 c. butter, softened

  5. 1 1/2 c. white sugar

  6. 3/4- 1 c. champagne (depending on your taste)

  7. 6 egg whites fresh strawberries, chopped Frosting:

  8. 4-5 c. powdered sugar

  9. 1 cup butter

  10. 1/2 tsp. vanilla

  11. 3-4 Tablespoons

  1. Cupcakes: Preheat oven to 350 degrees. Combine butter and sugar together until light and fluffy. Sift flour, baking powder, and salt together. Blend into creamed mixture alternately with champagne. In another bowl beat egg whites until stiff peaks form. Fold 1/3 whites into batter to lighten it, then fold remaining whites. (Batter may seem runny but it will thicken.) Add fresh strawberries. Bake for 12-15 minutes (time may vary depending on your oven, ) Frosting: Combine powdered sugar and butter until mixed well. Add vanilla and champagne, mix. Mix until desired consistency is reached, may need more powdered sugar to thicken frosting.
