  1. 1 pound lean ground turkey

  2. 1 can (16 ounces) chili beans, undrained

  3. 1-1/2 cups cooked brown rice

  4. 1 cup salsa

  5. 1 tablespoon vinegar

  6. 2 to 3 teaspoons chili powder

  7. 1 teaspoon sugar

  8. 1 teaspoon ground cumin

  9. 1/4 teaspoon garlic powder

  10. 1/4 teaspoon pepper

  11. 1/4 cup shredded reduced-fat cheddar cheese, optional

  1. In a skillet coated with cooking spray, brown turkey over medium heat; drain if necessary. Add chili beans, rice, salsa, vinegar and seasonings; mix well. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Sprinkle with cheese if desired. Yield: 5 servings.
