  1. 2 tablespoons 30ml Olive oil

  2. 3 teaspoons 15ml White wine vinegar

  3. 2 tablespoons 30ml Water

  4. 1/2 teaspoon 2 1/2ml Hot pepper sauce

  5. 1 cup 146g / 5.1oz Coarsely-grated Cheddar cheese

  6. Salt - to taste

  7. Freshly-ground black pepper - to taste

  8. 1 lb 454g / 16oz Broccoli - cut long florets

  1. In a blender blend together the oil, vinegar, water, Hot pepper sauce, Cheddar, and salt and pepper to taste until the vinaigrette is smooth.

  2. In a small saucepan bring 1-inch of water to a boil and in it cook the broccoli, covered, over high heat for 4 to 5 minutes, or until it is crisp tender. Drain the broccoli well and serve it topped with the vinaigrette.

  3. This recipe yields 4 servings.
