  1. 2 lbs. potato es (about 6 medium)

  2. 1 small onion , finely chopped

  3. 1/4 cup Italian Dressing (recipe follows)

  4. 1/2 cup mayonnaise

  5. 1 medium stalk celery , chopped

  6. 2 hard-boiled egg s, coarsely chopped Italian Dressing :

  7. 1 cup vegetable oil

  8. 1/4 cup lemon juice

  9. 1/4 cup white vinegar

  10. 1 t salt

  11. 1 t sugar

  12. 1/2 t dry mustard

  13. 1/2 t paprika

  14. 1/2 t dried oregano leaves

  15. 1/2 t onion salt

  16. 2 cloves garlic , crushed

  1. Dressing: Shake all ingredients in tightly covered jar; refrigerate at least 2 hours. Shake before serving. Salad: Heat 1" salted water (½ t salt to 1 cup water) to boiling. Add potatoes. Heat to boiling; reduce heat. Cover and cook until tender, 30 to 35 minutes. Drain and cool. Remove peel if desired...Cut potatoes into cubes, stir in onion, Italian dressing, salt and pepper. Cover and refrigerate at least 2 hours. Just before serving, toss with mayo until potatoes are well coated. Stir in celery and eggs.
