  1. 1 cn (15-1/2 ounces) salmon,

  2. 1 ts Chopped fresh or 1/4 ts

  3. 1/4c Mayonnaise or salad dressing

  4. 1/4c Plain yogurt Pared cucumber

  5. 1/3c Finely chopped, seeded and -- CUCUMBER SAUCE -- toast

  6. 5 English muffins, split and 2 tb Vegetable oil

  7. 1 Egg (with tops)

  8. 2 Green onions, sliced

  9. 1 tb Lemon juice

  10. 1/2ts Finely shredded lemon peel

  11. 2 tb Chopped fresh parsley

  12. 1/2c Crushed buttery crackers Drained and flaked Dried tarragon leaves

  1. + Directions : Mix salmon, crackers, parsley, lemon peel, lemon juice, onions and egg. Shape into 5 patties. Heat oil in 10-inch skillet until hot. Cook patties in oil 4 to 5 minutes on each side or until golden brown. Place a patty on each muffin. Serve with Cucumber Sauce.

  2. BURGERS; 445 CALORIES PER BURGER. CUCUMBER SAUCE: Mix all ingredients.
