  1. 1/2c Shortening

  2. 2 c Candied fruit, mixed

  3. 1 tb Vanilla

  4. 1/2ts Salt

  5. 1/2ts Baking soda

  6. 3 c Flour

  7. 2 Eggs

  8. 1/2c Granulated sugar

  9. 1 c Light brown sugar,*

  10. 1/2c Cream cheese, softened

  11. 2 c Broken pecans or almonds

  1. + firmly packed The cream cheese gives these cookies a smooth texture, while the fruits sparkle and sweeten the flavor.

  2. Nice for using the candied fruits that didn't make it into the fruit cake.

  3. Preheat oven to 350.

  4. In a large bowl, cream shortening and cream cheese until smooth and fluffy.

  5. Add sugars and eggs, mixing well.

  6. In a seperate bowl, sift flour, baking soda and salt together.

  7. Add flour mixture to egg and sugar mixture; add vanilla.

  8. Mix well.

  9. Add candied fruit and nuts.

  10. Drop by rounded spoonfuls onto lightly oiled cookie sheet and bake at 350 for about 10-12 minutes.

  11. The cookies will be just browned at the edges.

  12. Hint: You may have to mix candied fruit and nuts in with your hands; a little shortening on your fingers will keep the mixture from sticking.

  13. Yield: 3 dozen.
