  1. lots of butter - 80g at least

  2. 4 - 6 free range eggs

  3. salt and freshly ground black pepper

  4. ciabatta, sour dough, or other good bread

  5. caviar

  1. Melt butter very gently in a heavy based saucepan. Break eggs into it too, add salt and pepper and stir gently and constantly over low heat. Do not beat the eggs. Take at least 10 minutes to do this. When still quite runny remove from heat and continue to stir for a minute or two as the eggs will continue to cook. They should be served very moist and glossy.

  2. Meanwhile slice bread. Spread with more butter, if desired.

  3. Spoon eggs on top garnish with caviar. Open a bottle of champagne or sparkling wine and enjoy!
