  5. Nonstick vegetable spray 1 ts Cinnamon

  6. 1 c Flour

  7. 1/8 ts Cloves

  8. 2 tb Wheat germ, toasted

  9. 1/8 ts Nutmeg

  10. 1 1/2 ts Baking powder

  11. 1 1/3 c Carrots, shredded

  12. 1 ts Baking soda

  13. 1/2 c Raisins, soaked in

  14. hot water

  15. 1/2 ts Salt

  16. 2 Eggs

  17. 2 ts Brown sugar substitute

  18. 2 tb Vegetable oil

  19. 350 F. Spray muffin tins.

  20. paper muffin cups - low fat muffins tend to stick.)

  21. Combine dry ingredients in a large bowl. Stir in carrots and drained

  22. raisins.

  23. Beat eggs with oil. Stir into flour mixture. Divide batter evenly

  24. 12 tins. Bake for 30-35 minutes or until toothpick inserted in

  25. center of muffin comes out clean.
