  1. Schwarzsauer/Schwattsuur

  2. 11/2 kilogramm goose or duck giblets

  3. 1/2 liter water

  4. 1/4 liter vinegar

  5. 1/4 - 1/2 liter blood (or 1 fresh black pudding, Blutwurst)

  6. 3 onions

  7. 1 tb salt

  8. 200 grams dried fruits

  9. 1 tb peppercorns

  10. 1 tb cinammon

  11. 3-5 cloves

  12. 1 laurel leaf

  13. sugar

  14. 1/2 tablespoon marjoram

  15. some flour

  16. Goose or duck giblets are soft boiled with onions in salted water

  17. until done. Simultaneously cook dried fruits (plums,apples, pears)

  18. with little sugar in some water, add cinnamon, cloves, laurel leaf

  19. and some peppercorns. Boil until the fruits are soft. Pour off the

  20. fruits (serve the juice) and add them to the giblets- broth. Then

  21. mix cooled juice, fluor and goose or duck blood with a whisk and add to the dish. Gustar carefully with salt, vinegar, sugar and majoran. Heat carefully under permanent stirring until partly

  22. cooked. Serve with flour-dumplings or boiled potatoes.

  23. Leavings you may conserve in a potty at a cool place. Schwarzsauer

  24. is long lasti ng. If you like you may add 1/4 cup heavy cream

  25. before serving. Instead of birds you may take porkneck, pork ribs,

  26. pork kidney and pork heart.
