  2. 6 hard-shelled crabs

  3. 3 cups white stock

  4. 2/3 cup stale bread crumbs

  5. 1 slice onion

  6. 1 sprig parsley

  7. 2 tablespoons butter

  8. 2 tablespoons flour

  9. 1 cup cream

  10. Salt

  11. Cayenne

  1. Remove meat from crabs and chop finely.

  2. Add stock, bread crumbs, onion, and parsley. Simmer twenty minutes.

  3. Rub through a sieve, bind with butter and flour cooked together, then add cream add seasonings.

  4. Serve with pulled bread. .
