  1. 1 acorn squash

  2. 1/4 c olive oil kosher salt & freshly ground pepper, to taste

  3. 1/4 c brown sugar

  4. 1 t cayenne pepper

  5. 1 t garlic

  1. Preheat oven to 350. Slice the squash in half lengthwise and cut off end pieces. Spoon out and discard seeds, then peel squash (don't worry about doing a perfect job). Cut the squash into wedges about 1/2 thick. Mix together oil, sugar and seasonings in a medium bowl. Toss the squash in the seasoned mixture. Place the squash in one layer on a lightly greased baking sheet. Roast for about 35-40 minutes until tender.
