  1. 2 tablespoons margarine

  2. 6 green onions , cut in 1-inch lengths

  3. 1/2 cup onion , diced

  4. 5 tomatoes , peeled and coarsely chopped

  5. 1/2 cup cream

  6. 1 teaspoon fresh cilantro , finely chopped

  7. 1/4 teaspoon dried oregano

  8. 1 pinch ground cumin

  9. 1/2 teaspoon salt

  10. fresh ground black pepper , to taste

  11. 1 cup mozzarella cheese , grated

  12. 8 large potatoes , unpeeled and boiled

  1. Melt margarine in a frypan; add onions, green onions and tomatoes.

  2. Cook until soft and transparent, stirring frequently; about 5 minutes.

  3. Lower heat and add mozzarella cheese.

  4. Cook and stir until cheese is melted.

  5. To serve, pour sauce over cooked potatoes.

  6. OPTION: serve sauce over other vegetables instead of potatoes (i.e. green beans, broccoli or cauliflower).
