  1. For Salad:

  2. 3 cups romaine lettuce, torn

  3. 1 cup English cucumber, chopped

  4. 2 scallions, chopped

  5. 1/2 cup yellow bell pepper, chopped

  6. 1/2 cup red bell pepper, chopped

  7. 1 large carrot, peeled and sliced thin diagonally

  8. 1 Granny Smith apple, cored and sliced thin

  9. 1 cup fresh blueberries

  10. 1/2 cup walnuts

  11. 2/3 cup feta cheese (I use a Mediteranean Herb flavord feta)

  12. For Dressing:

  13. 3 tbsp. apple cider vinegar

  14. 2 tbsp fresh lemon juice

  15. 2 tsp. dijon mustard

  16. 2 tsp. honey

  17. 1/2 tsp onion powder

  18. 1/4 tsp kosher salt

  19. 1/2 cup grapeseed oil

  20. 2 tbsp poppy seeds

  1. Toss lettuce, cucumber, scallions, bell pepper and carrot together. Arrange apple slices ontop and sprinkle with blueberries, walnuts and feta cheese.

  2. To prepare dressing, whisk together vinegar, lemon juice, mustard, honey, onion powder and salt. Slowly drizzle in oil, whisking constantly, until combined. Stir in poppy seeds.

  3. Pour over salad and serve.
