  1. 2 tablespoons Red wine vinegar

  2. teaspoon Minced garlic

  3. 1 tablespoon Dijon mustard

  4. 6 tablespoons Vegetable oil

  5. Salt and pepper to taste

  6. 1 Small red onion thinly sliced

  7. 10 cups Watercress, red-leaf lettuce

  8. And Belgian endive, bite-size, loosely packed

  1. Combine vinegar, garlic and mustard in mixing bowl. Blend well.

  2. Add oil and salt and pepper to taste; blend well with a wire whisk.

  3. Place onion rings and salad greens in a bowl and toss well with dressing. Makes 4 to 6 servings.
