  1. 1 beef roast ,

  2. 3 to 4 pounds, top round (London Broil), chuck, etc.

  3. 1 cup barbecue sauce , your favorite or homemade

  4. 1/2 cup apricot preserves or orange marmalade

  5. (I sometimes mix them sugar free of course)

  6. 1/2 cup chopped green bell pepper

  7. 1-tablespoon Dijon mustard

  8. 2 teaspoon light brown sugar Splenda blend or regular, packed

  9. 1 medium onion , sliced

  1. Trim beef roast and cut into 4 uniform pieces.

  2. Place roast in slow cooker.

  3. Combine remaining ingredients and pour over roast.

  4. Cover and cook on LOW for 8 hours, or until beef is tender.

  5. Slice beef (might want to shred) then return to juices in cooker.

  6. Cover and cook for 20 minutes longer.

  7. Serve this barbecued beef on warm split buns with coleslaw, or serve with hot cooked rice and a salad.
